Established in 1988 as the second winery of Grace Wine from Yamanashi Prefecture's renowned Katsunuma region, Chitose Winery represents a successful expansion of mainland Japan's winemaking expertise into Hokkaido's unique climate. Originally founded as Grace Wine Chitose Winery with the ambitious goal of brewing world-class Pinot Noir in northern Japan, the facility was strategically located just 15 minutes from New Chitose Airport. The winery operates from a beautifully renovated agricultural cooperative grain warehouse built with distinctive Sapporo soft stone, creating a retro atmosphere that has become a local landmark. In 2011, the operation became independent as Hokkaido Central Wine Co., Ltd., rebranding as Chitose Winery while maintaining its commitment to producing premium wines specialized for northern regions. Their partnership with Kimura Farm in Yoichi, spanning over 30 years, has been particularly fruitful, with Kimura recognized as 'Japan's leading Pinot Noir grower.' The winery produces approximately 35,000 bottles annually, including their signature North Wine series and unique Haskap fruit wines utilizing Hokkaido's native berries.
